IFT Abstract — Ultrafiltration of Milk

While ultrafiltration of milk has been widely applied around the world for many years, production of ultrafiltered milk in the North American marketplace was largely limited due to fiscal constraints associated with milk support price levels in this market. However, in recent years, combinations of factors have converged making domestic production of milk protein concentrates both common and commercially attractive.

This paper attempts to establish a common lexicon for terms and phrases useful to those involved in both the production and consumption of the various commercially available ultrafiltered milk products. Information will be presented on broad product classifications, the associated product compositions, product utility and utilization, and the manufacturing techniques employed in the commercial production of these products.

This will be further framed in an economic context of drivers and barriers to continued domestic production of the various milk protein concentrate products as well as the ongoing influence of social and political factors on this issue.
